Instant Khatta Dhokla / White Dhokla is perfect Tea Time Snack prepared in most Gujarati household. Traditionally, in making of Khatta Dhokla, the fermentation process is must but for Instant Dhokla Recipe, I have used a mixture of Rice Flour and Chickpea flour. These Dhoklas taste as good as traditionally made from fermented batter. You can add Sour Buttermilk or Citric Acid to get the mild tangy taste.
Ingredients:
- 3 cup Buttermilk
- 2 cup Flour (Ratio = 1kg Rice & 250g Chickpea)
- 2 Green Chillies Sliced
- 2 Green Chillies finely chopped
- Curry Leaves
- Fresh Coriander finely chopped
- 3 tbsp. Oil
- 2 tsp. Sugar
- 1 tsp. Red Chilli Powder (optional)
- 1 tsp. Ginger paste
- 1 tsp. Mustard Seeds (Rai)
- 1/4 tsp Citric Acid (Nimbu ke Phool)
- 1/2 tsp. Cooking Soda (Sodium Bicarbonate)
- Salt to taste
Instructions:
- Take a large bowl, add Flour, Citric Acid, Sugar & Salt.
- If you are using sour buttermilk, there’s no need to add Citric Acid.
- Add buttermilk as required and prepare the batter for Dhokla, make sure there are no lumps.
- Add chopped Green Chillies and Ginger paste, mix well and keep it aside for 5 minutes.
- Grease the Dhokla Thalis with Oil.
- In a steamer add water and heat over high flame.
- Place a stand so that there’s gap between water and Dhokla plate.
- Wrap cotton cloth over the lid and cover the steamer.
- Divide Dhokla Batter into 2 equal parts (for cooking 1 plate Dhokla at a time).
- Add Soda in 1 part, mix well and pour the batter immediately into greased plate and fill them until half.
- Sprinkle some Red Chilli Powder (optional).
- Place Dholka Thali in the steamer, make sure the plate doesn’t touch the water.
- Cover with lid and steam for 15 minutes until Dhoklas are cooked.
- After 15 minutes, insert a knife into Dhokla and ensure that it comes out clean.
- Remove the plate and let it cool down for 5 – 10 minutes, meanwhile prepare the second plate of Dhokla.
- After 10 minutes, cut Dhokla into diamond shape pieces.
- For Tadka I am sharing 2 different methods.
- – 1st method
- Heat oil in Tadka pan.
- Add Mustard seeds, Curry Leaves and sliced Green chillies, allow them to crackle.
- Switch off the gas and drizzle the Tadka evenly on Dhoklas, garnish with fresh coriander.
- – 2nd method
- Heat oil in a kadhai.
- Add Mustard seeds, Curry Leaves and sliced Green chillies, allow them to crackle.
- Add pieces of Dhokla, add some fresh coriander leaves and toss for a couple of minutes.
- Switch off the gas and serve Instant Khatta Dhokla.
- You can toss for 3 – 4 minutes over medium flame to make Dhokla crispy.
- Serve with Chunda or Chutney.
