Traditional Gujarati Dal Dhokli Recipe – prepared with Lentils, Flour & spices – is a complete One Dish Meal. In this recipe, spicy whole wheat uncooked roti pieces (known as Dhokli) are simmered into Gujarati Dal. Dal Dhokli is a Sunday Morning delight in most Gujarati household. Ingredients:
- – For the Dal
- 1/2 cup Split Green Gram without skin (Moong Dal)
- 1/2 cup Split Pigeon Peas (Toor Dal / Arhar Dal)
- 80g Jaggery
- 2 tbsp. Peanuts
- some fresh Coriander
- 2 tbsp. Oil
- 6 – 7 Garcinia indica (Kokum)
- 4 Cloves (Lavang)
- 1 tbsp. Red Chilli Powder
- 1 tbsp. Kashmiri Chilli Powder
- 1 tbsp. Coriander-Cumin Powder (Dhana Jeera)
- 1 tsp. Turmeric Powder (Haldi)
- 1/4 tsp. Asafoetida (Hing)
- 1 tsp. Mustard Seeds (Rai)
- 1 tsp. Cumin Seeds (Jeera)
- 2 dry Red Chillies
- some Curry Leaves
- Salt to taste
- – For the Dhokli
- 2 cup Whole Wheat Flour
- 1 tbsp. Bengal Gram Four (Besan)
- 1 tsp Red Chilli Powder
- 1 tbsp. Clarified Butter (Ghee)
- 1/2 tsp. Carom Seeds (Ajwain)
- 1 tsp Coriander-Cumin Powder (Dhana Jeera)
- 1/2 tsp Turmeric Powder (Haldi)
- Salt to taste
Instructions:
- Mix Moong Dal & Toor Dal in a bowl and rinse 2 – 3 times with fresh water.
- Cook Dal in a pressure cooker for 5 whistles.
- Take peanuts in a small steel bowl and place it on the Dal in the same pressure cooker.
- While Dal is cooking, prepare dough for Dhokli.
- Take a large bowl, add Wheat flour, Besan, Dhana Jeera Powder, Red Chilli Powder, Turmeric Powder, Ajwain, Salt and Clarified Butter (or Oil).
- Mix well all ingredients.
- Add water as required (approx. 1 cup) in small quantity and prepare medium stiff dough for Dhokli.
- Cover with lid/cloth and keep it aside for 10 – 15 minutes.
- Prepare large size balls from the dough.
- Dust dough balls with flour and place it on the rolling board, roll out slightly thick rotis.
- Cut rotis into multiple small pieces (diamond shape) using a knife and keep them on a plate.
- After cooking the Dal, grind using a Hand blender until smooth.
- Heat Oil in pressure cooker over medium flame.
- Add spices in warm oil – Rai, Jeera, Cloves, Asafoetida, Dry Red Chillies and Curry leaves.
- Sauté for about 30 seconds.
- Add Dal, 1 cup water and mix well.
- Now add spices – Dhana Jeera Powder, Turmeric Powder, Salt, Kashmiri Chilli Powder, Red Chilli Powder, Jaggery and Kokum ( or 1 – 2 tbsp Lemon Juice)
- Mix well all ingredients, add some peanuts and cook till it starts boiling.
- Add some fresh coriander and cook for another 2 minutes.
- After 2 minutes, add pieces of Dhokli one by one into boiling Dal.
- You can add some more water at this stage if required.
- Cover the pressure cooker with lid and cook for 1 – 2 minutes, do not allow it to whistle.
- Switch off the gas and do not open the cover for 10 – 12 minutes, till pressure releases.
- After 10 – 12 minutes, open the pressure cooker.
- Dal Dhokli is Ready to serve.
- While serving, add some Clarified butter, some fresh Coriander and cooked Peanuts.
- Serve hot Dal Dhokli with Rice, Papad and Buttermilk.
